Dairy-Free Baked Oatmeal Bars



These bars are the perfect healthy breakfast or mid-day snack.


Ingredients

  • 2 cups rolled oats

  • 1 tsp ground cinnamon

  • 1 tsp baking powder

  • 1 tsp salt

  • 1 Tbsp light brown sugar

  • 1 flax egg

  • 1 cup of Simply unsweetened almond milk

  • 1/3 cup maple syrup

  • 3 Tbsp melted coconut oil

  • 1 tsp vanilla extract

  • 1/4 cup unsweetened coconut shreds

  • 1/4 cup sliced almonds

  • 1/4 cup Enjoy Life chocolate chips


Instructions

  1. Preheat oven to 350° and line a 9 inch square dish with parchment paper

  2. In a large dish, combine all ingredients

  3. Bake for 45-50 minutes

  4. Let cool and slice into squares

  5. Store covered in fridge, for up to 5 days

  6. When ready you eat the bar, put it in a microwave safe bowl, pour almond milk on top.
