These muffins taste just like a decadent chocolate chip banana bread! No flour, no dairy? No problem.
Ingredients
2 ripe bananas
2 flax eggs (or regular eggs if not vegan)
1/4 cup maple syrup
1 1/2 Tbsp vanilla extract
2 tsp baking powder
1 1/2 tsp cinnamon
1 cup unsweetened almond milk
2 cups quick cooking oats
1/2 cup Enjoy Life chocolate chips
Instructions
Preheat over your 400°
Combine all ingredients in blender (add chocolate chips after blending). Blend until completely smooth.
Lightly grease muffin pan with oil and fill your cups 2/3 full.
Place in oven and bake for 15 minutes.
