Chocolate Chip Banana Oat Muffins


These muffins taste just like a decadent chocolate chip banana bread! No flour, no dairy? No problem.


Ingredients

  • 2 ripe bananas

  • 2 flax eggs (or regular eggs if not vegan)

  • 1/4 cup maple syrup

  • 1 1/2 Tbsp vanilla extract

  • 2 tsp baking powder

  • 1 1/2 tsp cinnamon

  • 1 cup unsweetened almond milk

  • 2 cups quick cooking oats

  • 1/2 cup Enjoy Life chocolate chips


Instructions

  1. Preheat over your 400°

  2. Combine all ingredients in blender (add chocolate chips after blending). Blend until completely smooth.

  3. Lightly grease muffin pan with oil and fill your cups 2/3 full.

  4. Place in oven and bake for 15 minutes.
