Vegan Pumpkin Sugar Cookies


VEGAN PUMPKIN SUGAR COOKIES 🎃 I literally saved half of the batter just to eat raw 🤩. I love fluffy, cloud like cookies. Anyone else?


Ingredients

1/2 cup of vegan butter

1/2 cup organic cane sugar

1/4 cup brown sugar

1 tsp pure vanilla extract

1/4 cup pumpkin puree

1 1/2 cups of heaping I bleached all purpose flour

1/2 Tbsp corn starch

1 tsp baking powder

1/2 tsp baking soda

1/4 tsp salt

1 tsp pumpkin pie spice

2/4 tsp cinnamon

1 Tbsp unsweetened almond milk


Frosting Ingredients

1/2 cup of vegan butter

1/2 tsp vanilla extract

2 1/2 cups powdered sugar

1/4 tsp each cinnamon and pumpkin pie spice


Instructions

1. Add softened butter to a large mixing bowl and cream with a mixer

2. Add sugar, brown sugar, vanilla, and pumpkin and mix again

3. Mix in all of the dry ingredients, don’t overmix

4. Add in almond milk until a smooth batter is formed. Freeze dough for 15 minutes.

5. Preheat oven for 350°

6. Bake on center rack for 10-12 minutes

FOR FROSTING

1. Add softened butter and beat until light and fluffy. Mix in rest of ingredients.
