Easy, delicious, healthy, and dairy-free? Sign me up. This is the perfect fall chili for Sunday football, busy week nights, or meal prep.
Ingredients
•2 large chicken breasts (cooked and shredded)
•48oz Great Northern Beans (drained)
•1 can unsweetened coconut milk
•1 cup of salsa (I always add a little extra)
•1 Tbsp cumin
•1/2 tsp salt
1/4 tsp pepper
Instructions
1. Add all of your ingredients to a pot and bring to a boil, stirring occasionally. Then lower heat and simmer for 20 minutes.
2. Transfer ingredients to a crockpot on high for 4-5 hours.
