VEGAN PUMPKIN CORNBREAD. 🎃🌽drizzle with some vegan butter and honey and I promise you it’s the perfect fall side. I am so excited to bring this to Thanksgiving (only a month and a half away 😉😂).
Ingredients
•1 cup pumpkin purée
•2 flax eggs or regular eggs if not vegan
•1/2 cup coconut sugar
•1/2 cup of earth balance vegan butter (melted)
•1/3 cup non dairy milk
•1 cup all purpose flour
•1 cup cornmeal
•1 Tbsp baking powder
•1/2 tsp cinnamon
•1/2 tsp sea salt
Instruction
1. Preheat oven to 375° and lightly grease at 9’ round pan
2. Whisk together pumpkin, flax eggs (or regular eggs), coconut sugar, vegan butter, and non dairy milk
3. Mix in the remaining dry ingredients
4. Cook for 30 minutes!
