Vegan Pumpkin Walnut Pasta


Bored of the usual spaghetti and marinara? Me too. This is a perfect, easy, and delicious autumn dinner. šŸŽƒšŸšŸ‘»


Ingredients

  • Banza Rotini

  • 3 cloves garlic

  • 1/2 large onion (diced)

  • 3/4 cup almond milk

  • 3/4 cup pumpkin pureĢe

  • 1 1/4 teaspoon dried sage

  • Pinch of brown sugar

*Optional: 1/3 cup of chopped walnuts and some sauteĢed Brussels sprouts


Instructions

  1. Boil Banza in salted water

  2. In a medium sized fry pan, sauteĢ the onion and garlic in olive oil

  3. Add the sage and heat for one minute

  4. Reduce heat to low and add almond milk and pumpkin. Stir to combine

  5. Allow mixture to simmer for 8 minutes

  6. Serve over cooked pasta!
